Day 3: Ricotta Hotcakes

Aidan and I could not be more different when it comes to breakfast. For me breakfast is essential… he can take it or leave it. So for the time being I’m making breakfast for one during the week. And thought I may as well use this time to experiment!
A bowl of porridge or a piece of toast is fine when I’m dashing out the door. But now I’m staying at home making something new for breakfast is a great way to start the day. Also it’s a fantastic way to use up bits and bobs in the fridge or the fruit bowl.
I had some leftover ricotta and so instantly thought of the ricotta hotcakes that Granger & Co make. They are normally served with a honeycomb butter which is amazing at brunch…. but a bit sweet for me first thing in the morning! So in this version I spread them with a little butter and a small bit of maple syrup. All the sweetness I need!
Izy Hossack at Top With Cinnamon has a brilliant recipe for these which I followed pretty much to the letter (expect for the honeycomb butter that is!)

They were pretty simple to make. My top tip would be to be careful when turning them over – my first attempt made a bit of a mess! But still tasted good!
One egg and about a quarter of the other ingredients is plenty for a breakfast for one (four small pancakes). And I’m counting whisking the egg white by hand as my daily exercise too! Definitely adding an electric whisk onto my equipment wish list!
I used a non-stick pan so didn’t add any oil to fry the hotcakes…just to keep it a tiny bit healthier. I will definitely be making these again!
